DIY Lion Cupcakes

Morning everyone! Before we get down to cupcake art tutorials, take a minute to visit Confessions of a Northern Belle! I am guest posting and desperately need some advice on my upcoming Maid of Honor Speech! 

Over the weekend I helped host a baby shower for my friend Abby and her little peanut due to arrive in November. Abby is an AVID Lion King fan so a Lion/Jungle baby shower was essentially a must. The decor turned out super cute and the food was amazing!
However, I've got to toot my horn a little and say the hit of the party were my Lion Cupcakes! This was a first for me and no I did not use a Pinterest tutorial {for the first time ever} so I was feeling pretty stinkin' good that they came out as good as they did. And shockingly, they were really easy! So, I'm going to share how to make them so you too can make adorable little lion cupcakes. 
WHAT YOU'LL NEED

For the Vanilla Cupcakes

  • 1 c Granulated Sugar
  • 1 3/4 c Flour
  • 1 1/2 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/2 tsp Salt
  • 1/2 c {or 1 stick} Unsalted Butter, at room temp
  • 2 eggs
  • 1/3 c Greek Yogurt or Sour Cream {full fat versions!}
  • 1 tbsp Vanilla Extract {spring for the good stuff - not the fake}
  • 2/3 c Whole Milk

For the Vanilla Buttercream Frosting

  • 1 c {or 2 sticks} Salted Butter, at room temp
  • 1 tsp Whole Milk
  • 2 tsp Vanilla Extract {again, the real stuff}
  • 3-4 c Powdered Sugar 

Additional
  • Yellow, Red & Blue Food Coloring
  • Brown Cupcake Liners {I used these from Wilton, found at Target}
  • Candy Eye Balls {available at Target, Michaels, JoAnn, etc}
  • Black Decorating Gel
  • Piping Bag & Tip {I used a #32 Tip}
DIRECTIONS
  • Start by preheating your oven to 350˚.
  • Add butter to a mixing bowl and beat until soft and smooth.
  • Add sugar, flour, baking powder, baking soda and salt to bowl and beat on medium speed until well combined and a tad crumbly. It helps to add flour just a bit at a time. 
  • Add eggs, Greek yogurt {or sour cream} and Vanilla then mix. 
  • Finally, add the milk and mix on low speed. Your batter should be pretty thin. 
  • Fill the cupcake liners about half full and bake for 12-15 minutes {testing after 12 minutes to see if they're done}. They should be lightly browned on top and a toothpick should come out without any wet batter stuck to it. 
  • Let your cupcakes cool, ideally overnight in the fridge.
  • Once the cupcakes have cooled, you can start your frosting!
  • Add 2 sticks of butter to mixer and beat until completely smooth. 
  • Add vanilla and milk and mix until combined. 
  • Slowly add powdered sugar, I will usually add one cup at a time and mix well. Continue to add powdered sugar until you reach your desired taste and consistency, usually between 3-4 cups for me. 
  • When you've got your frosting where you want it to be it's time to add food coloring for the lion's face. I added mostly yellow with a couple of drops of red. Just play around with it until you get the color that you want. 
  • Fill your piping bag with frosting making sure to push the frosting to the bottom of the bag and remove any air bubbles. I started on the outside of the cupcake and frosted in a swirl motion creating a nice flat base for the face. I made a few extra cupcakes so I had some practice ones - I definitely recommend doing this, specially if you aren't used to a piping bag!
  • Next I added another smaller swirl on the bottom of the cupcake. I tried to pick a spot on the cupcake that wasn't completely frosted to add the snout. The on the top of the cupcake did two quick little lines for the ears. 
  • Now it's time to add your eyes! I learned the hard way that not all pupils are created equal. Take the time to try and pick two eyes that have the same sized pupils, otherwise you end up with some pretty wacko looking lions. 
  • Although your cupcakes now look like pigs, do not be alarmed! The mane makes all the difference. At this point you should clean out your piping bag and tip. Let them air dry while you create your mane frosting. With the remaining buttercream frosting add a little more red food coloring and a drop or two of blue. This color took me a bit to get, so just experiment! Add to your piping bag and simply add little drops of frosting all around the perimeter of the cupcakes. 
  • Then, finally, you will use your black decorating gel to add a nose and mouth. I practiced a few times on some paper towel to be sure I got the look I wanted. I added a glob for the nose first, then went back and added the thin line down the middle, then added the little smile last.

Kenley's Baby Book

I didn't start Kenley's baby book until after she was born - which I regret. BUT, thanks to this here blog I had my entire pregnancy and her whole first year documented. Thank goodness because without it I don't think I'd remember a dang thing.I looked at A LOT of different baby books, none of which really got me excited so I decided to create my own using Shutterfly. Shutterfly offers a ton of different photobook layouts and designs but also allows you to customize it - which is what I did. I am pretty obsessed with how it turned out and Kenley loves it too!

Let me tell you, this book was a labor of love. I put more time than I care to admit putting it together but am so, so happy with it. It's such a special keepsake that I can share with Kenley and I think it will mean even more that I made it special just for her.

DIY Marshmallow Cakes

When I saw these adorable little Marshmallow Cakes on Icing Designs, I just knew I had to try and recreate them for Kenley's Birthday Party. It was such a fun project and I'm really happy with how they turned out, so I figured I'd give you all a tutorial so you can make them for your next birthday event! 

Here's what you need/what I used {this can vary slightly based on what you're doing}...

                                                                                *1 bag of large marshmallows
                                                                                *1 bag of WHITE Wilton's Candy Melts
                                                                                *1 bag of YELLOW Wilton's Candy Melts
                                                                                *YELLOW Sprinkles
                                                                                *PINK Sprinkles
                                                                                *RED Food Coloring
                                                                                *Parchment Paper
                                                                                *Decorating Squeeze Bottle
                                                                                *Toothpicks
                                                                                *Mini Cupcake Liners

STEP 1: This is important, pour yourself a nice big fat glass of wine. Everything is better with wine and cooking crafts are no different!


STEP 2: Time to get to work. The first thing you're going to do is put together your candles. I did this by melting some white candy melts following the instructions on the bag. 
I wasn't sure how many of the melts to use, so I threw in about 25 and that was more than enough.


STEP 3: After the candy is melted, pour it in to a handy dandy little squeeze bottle {found at Michaels} and then begin "drawing" the base for the candles on a sheet of parchment paper. 
 It took a few to get the hang of it and I found that tapping the top of the squeeze bottle on the counter in between each one helped eliminate air. You can tell a few of them got air bubbles, but I made a TON just to be sure I had enough good ones in the end. 


STEP 4: *CRUCIAL!* You need to let your candles dry COMPLETELY! It is if utter importance that you practice some patience {this is where the wine comes in handy} and let these suckers harden all the way before moving on to the next step. 


STEP 5: Once your candles are completely dry, repeat steps 2 & 3 using either yellow Candy Melts or adding yellow food coloring to the white {I use yellow melts}. This time you will be adding the flame to the top of the candle. You want to be sure that the flame is connected to the base creating one piece when dried. 


STEP 6: Before the yellow hardens, add yellow sprinkles creating the look of being lit! 


STEP 7: Refill your wine and once again wait for the candy to completely harden. I'd say it took about 20-30 minutes. Once the candles are completely dry, pop them off the parchment paper and move them to a plate. 
HOLY CRAP, THEY ACTUALLY LOOK LIKE CANDLES! 


STEP 8: Melt more candy, this time use the color frosting you'd like. I just added red food coloring to the white this time to create a lovely pink color. 


STEP 9: Dip your marshmallow. I dipped it a little less than half way, swished it around and then shook off any excess. 


STEP 10: Immediately after dipping the marshmallow grab a toothpick and create a hole. Next, gently insert the candle. Because the frosting will be warm, the candle will melt, so be sure not to you're not pushing it too low. And finally, sprinkle the top with your choice of sprinkles. Then once again wait for the candy to harden.

VOILA!

To complete the project I bought these mini cupcake liners off Etsy and used those to serve the marshmallows.

Pink Balloon First Birthday

When Jason and I first talked about Kenley's First Birthday Party, we agreed that the first one needed to be a big one and when I started to brainstorm I had a million ideas running through my head. We threw around a couple of ideas for the location but ultimately decided that our party room was most convenient and made the most sense. Once we had the place nailed down it was time to start thinking of themes, ideas and decor. After several different ideas I landed on a "Pink Balloon" theme. I loved it because it was fun, girly, very appropriate for a birthday and allowed for some very fun decor. 

But enough of me blabbing...here's an up close look at Kenley's Pink Balloon First Birthday Party!

the OUTFIT. 
I'd say aside from a wedding dress and a prom dress the first birthday dress is the most important outfit a girl will wear. OK, maybe not, but to me Kenley's outfit was very important and needed to be perfect!

What better menu for a 2pm 1st Birthday Party than a dessert bar? It was so fun to put together and I absolutely love how it turned out - not to mention the treats were DELICIOUS. I'm still on a sugar high!

the CAKE.
The cake is a pretty integral piece in the first birthday but this was one thing I didn't even think twice about. I knew I wanted a cake from Sweet Retreat and I knew I wanted a pink ombre rosette design. I love how it turned out and it was DELICIOUS! Kenley was very dainty while eating it but absolutely loved the sugar.

the LOVE.
I really can't say it enough - Kenley is a lucky little girl. As a mama I don't think anything could make me happier than seeing the people I love all together to celebrate my baby and not because of the gifts - though everyone was extremely generous - but because I know that these people truly love Kenley.
